RAASA VARU NU SHAAK

If you are Gujju then you know the standard comfort foods - kichidi being the main one.  Its a the Indian vegetarian equivalent to chicken noodle soup.  Its soothing, satisfying and totally hits the spot. But more than kichidi, is its accompaniments.  Thats where raasa varu nu shaak comes into play.  When we were sick, mom was tired or its was just so terribly cold outside, mom would whip up some kichidi, kudhi and raasa varu nu shaak which are essentially steamed potatoes in a spicy tomato broth.  I think its the gujju equivalent of aloo dum?  in any case, its delicious and simple and so so good.  like rub your belly good.

POTATOES IN A SPICY TOMATO BROTH

KITCHEN MOM'S


 

INGREDIENTS (Serves 6 - 8)

  1. 4 large potatoes (boiled & diced)
  2. 4 roma tomatoes (finely chopped)
  3. 4 tbs olive oil
  4. 2 bay leaves
  5. 1 tsp cumin seeds
  6. 1/2 tsp hing (asafetida)
  7. 1 tsp adu marcha (see here)
  8. 1/2 tsp haldi
  9. 2 tsp dhana jeeru 
  10. 1 1/2 tsp red mirchi
  11. salt to taste
  12. 2 cups of water

INSTRUCTIONS

  1. Heat oil.
  2. Add the cumin seeds and let sizzle for 30 seconds.
  3. Add the hing and adu mircha and saute for 1 minute.
  4. Add the haldi, dhana jeeru, red mirchi, salt and tomatoes.  Cook for 5 - 7 minutes or until the juice separated from the tomatoes.
  5. Add the potatoes and water.  Cook until stew consistency is achieved.
  6. Garnish with freshly chopped cilantro and a lemon wedge.  Serve with rotli/naan/basmati rice.
