BRUSCHETTA BAR
The HUBS and I recently went to go visit some family and there was discussion of a "Burrito Bar". Believe me if such things existed, I'd never leave. But it did get me to thinking that a "Bruschetta Bar" for a party would be fun. Basically lay out a whole bunch of cheeses, greens, and other garnishes and voila! Customizable apps for the picky! So this past week I did a test run on the HUBS. These were our creations on whole wheat baguette slices:

BRUSCHETTA ONE INGREDIENTS
- whole milk ricotta + 1 tsp grapefruit juice and 1 tsp grapefruit zest
- arugula
- balsamic glaze
- EVOO
BRUSCHETTA TWO INGREDIENTS
- pesto (fresh basil + EVOO + parmesan + pine nuts)
- fresh mozzarella
- arugula
- parmesan
BRUSCHETTA THREE INGREDIENTS
- pea + mint chutney (1/3 c peas, 1/3 c fresh italian parsley, 6 mint leaves, salt to taste, EVOO)
- fresh mozzarella
- sautéed julianned onions
BRUSCHETTA FOUR INGREDIENTS
- avocado
- pickled red onions (red onions + dash of vinegar)
- diced jalapeños
- freshly chopped cilantro
- lime juice
